Steps To Move Folder Redirection For My Documents to Different File Server?

If we are replacing a Windows Server 2003 with a Windows Server 2008 R2. We are already on 2008 R2 domain.Is it possible to programmatically and/or through Group Policy to have the documents moved to the new 2008 R2 server and update the Offline Files settings on the Windows 7 computers?
